Salmon Salad
Ingredients

Salmon Fillets

Sugar snap peas
-
1 avocado
-
Salad leaves - I used spinach and chopped ice gem lettuce

Half a cucumber
-
A handful of cherry tomatoes

1 Onion

2 tbsp lemon juice
-
Salt and Pepper
Ingredients

Set the grill to a medium-high heat

Tear off a sheet of tin foil and place a salmon fillet in the middle of the sheet

Mould the foil like a cup around the salmon so nothing can leak out

Add tbsp of lemon juice and a hand full of dried parsley

Pull all sides of the foil upwards and fold the top loosely.

Place on a tray and place in the grill for 15 minutes at a medium-high heat

Lay salad leaves on a plate

Chop tomatoes, cucumber, sugar snap peas and onion and add to the plate
-
Season with a sprinkle of salt and pepper. Then dress the salad with 2 tbsp of lemon juice.

Take the salmon out of the grill when ready and place on top of the salad.
