Salmon Salad


  • Salmon Fillets 

  • Sugar snap peas

  • 1 avocado 

  • Salad leaves - I used spinach and chopped ice gem lettuce

  • Half a cucumber 

  • A handful of cherry tomatoes

  • 1 Onion

  • 2 tbsp lemon juice 

  • Salt and Pepper

  1. Set the grill to a medium-high heat 

  2. Tear off a sheet of tin foil and place a salmon fillet in the middle of the sheet

  3. Mould the foil like a cup around the salmon so nothing can leak out 

  4. Add tbsp of lemon juice and a hand full of dried parsley

  5. Pull all sides of the foil upwards and fold the top loosely.

  6. Place on a tray and place in the grill for 15 minutes at a medium-high heat

  7. Lay salad leaves on a plate 

  8. Chop tomatoes, cucumber, sugar snap peas and onion and add to the plate 

  9. Season with a sprinkle of salt and pepper. Then dress the salad with 2 tbsp of lemon juice.

  10. Take the salmon out of the grill when ready and place on top of the salad.
